500 ml of boiling water

Preparation:
1. For every 100 grams of amaranth, add 170 ml of boiling water.
2. Pour the contents of the packet into a large, non-stick pan. Cover the contents with boiling water (or vegetable stock for extra flavour).
3. Add 2 teaspoons of salt and 4 table spoons of extra virgin olive oil.
4. Cook slowly, stirring it from time to time, for about 3 minutes.
5. Add more boiling water a little bit at a time if the product dries too much.
6. Remove from the heat and blend with an immersion blender to form a cream before serving.
